  • 1/2 cup Parmesan Cheese Nutritional yeast gives a dairy-free alternative
  • 3 cloves Garlic Minced; garlic powder can be used if fresh is unavailable
  • 1 tablespoon Italian Seasoning Dried oregano and basil can be substitutes
  • 1 teaspoon Salt Adjust to personal preference
  • 1/2 teaspoon Pepper Adjust to personal preference
  • 2 tablespoons Olive Oil Can use avocado oil or melted butter as alternatives
  • 1 tablespoon Fresh Basil Optional; omit if not available

Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Grease your baking dish with olive oil or butter.
  2. In a large mixing bowl, combine zucchini, chicken, and cherry tomatoes. Add garlic, Italian seasoning, salt, and pepper. Mix thoroughly.
  3. Drizzle the mixture with olive oil and toss until all pieces are well-coated.
  4. Transfer the mixture into the greased baking dish, spreading it out evenly.
  5. Sprinkle mozzarella and Parmesan cheese on top of the mixture.
  6. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  7. Allow the bake to cool for a few minutes before serving. Garnish with torn fresh basil.
