Ingredients
  

For the Rice
  • 2 cups sushi rice authentic sushi rice for sticky consistency
  • 2 cups water for cooking the rice
  • 1 pinch salt enhances flavor
  • 3 tablespoons sugar balances the vinegar
  • 1/4 cup rice vinegar for authentic sushi flavor
For the Crab Mixture
  • 8 ounces imitation crab meat provides savory seafood flavor
  • 1/4 cup Kewpie mayonnaise can substitute with Greek yogurt
  • 1 teaspoon wasabi optional; add to taste
For the Toppings
  • 1 medium cucumber sliced thinly
  • 1 tablespoon soy sauce for marinating cucumbers
  • 1 teaspoon sesame oil for marinating cucumbers
  • 2 tablespoons olive oil for toasting panko
  • 1/2 cup panko breadcrumbs for crunchy topping
  • 1 tablespoon Sriracha chili sauce to taste for heat
  • 1 ripe avocado mashed as topping
  • 2 tablespoons green onions sliced for garnish
  • 1 tablespoon furikake optional seasoning

Method
 

Preparation
  1. Rinse the sushi rice in cold water until the water runs clear, about 5 minutes.
  2. Transfer the rice to a pot with water and salt. Bring to a boil, lower to simmer, cover, and cook for 20 minutes.
  3. Let it rest covered for another 10 minutes, then fluff and mix in sugar and rice vinegar.
  4. In a medium bowl, combine crab meat, mayonnaise, and wasabi, then mix until blended.
  5. Preheat oven to 350°F (175°C). In a greased baking dish, firmly press the sushi rice into an even layer.
  6. Spread the crab mixture evenly over the rice. Bake for 10-15 minutes until heated through.
  7. Slice cucumber, toss with soy sauce and sesame oil. Toast panko in olive oil until golden.
  8. Once baking is done, spread mashed avocado over crab, top with cucumbers, panko, Sriracha, green onions, and furikake.
  9. Serve hot for a delicious family meal.
