  • 1 ring Chorizo May swap with any sausage or seafood for variations
For the Vegetables
  • 1 medium Onion Shallots can be used for a milder taste
  • 3 cloves Garlic Use fresh for best results
  • 1 medium Red Pepper Any sweet bell pepper can be used
For Seasoning
  • 1 tablespoon Cajun Seasoning Adjust to taste

For the Cooking Base
  • 2 tablespoons Vegetable Oil Can substitute with olive oil or neutral oil
  • 1 can Chopped Tomatoes Canned or fresh puréed work

  • 1.5 cups Basmati Rice Adjust liquid and cooking time if using long-grain rice
For Garnish

Method
 

Cooking Steps
  1. Heat the oil in a large skillet or pot over medium heat until shimmering.
  2. Cook the chicken chunks, seasoned with salt and black pepper, for 7-8 minutes until golden brown, then remove from the pan.
  3. Sauté the onion in the same pan for 3-4 minutes until translucent.
  4. Add garlic and red pepper, frying for another 2-3 minutes.
  5. Brown the chorizo in the pan for 3-4 minutes.
  6. Combine the cooked chicken, Cajun seasoning, and chopped tomatoes, cooking for 5 minutes.
  7. Stir in the rice and chicken stock, bringing to a simmer, then cover and cook for 15 minutes.
  8. Let rest for 5 minutes off the heat, then fluff rice and garnish with parsley before serving.
