Preparation Steps
  1. In a blender, combine 2 cups of frozen blueberries, ½ cup of coconut milk, and ½ cup of ice cubes. Blend on high for about 30 seconds or until smooth and creamy, pouring into a tall glass to create the blue layer.
  2. In the cleaned blender, blend 2 cups of frozen strawberries, ½ cup of coconut milk, and ½ cup of ice cubes. Pour this layer gently over the back of a spoon onto the blue layer to maintain distinct layers.
  3. Blend ½ cup of coconut milk with ½ cup of ice cubes until smooth and creamy for the white layer. Pour carefully on top of the strawberry layer using a spoon.
  4. Top with fresh mint leaves and serve immediately for an enjoyable refreshing summer treat.
