Preparation
- Prepare the Profiteroles by making them from scratch or thawing store-bought ones. Preheat oven to 425°F (220°C). Pipe or scoop dough onto a lined baking sheet and bake for 20-25 minutes.
- In a chilled mixing bowl, combine whipping cream, sugar, and vanilla extract. Beat on high speed until stiff peaks form, about 3-5 minutes. Optionally, add cream of tartar.
- Take a large trifle bowl and pipe a layer of whipped cream at the bottom. This will act as a base for the profiteroles.
- Layer the cooled profiteroles on the whipped cream, pressing them down lightly.
- Top the profiteroles with a mix of chosen berries, arranging them colorfully.
- Repeat the layering steps two more times, finishing with a final layer of berries on top.
- Pipe decorative dollops of whipped cream on top of the berries and garnish with mint leaves. Cover and refrigerate for at least 2 hours before serving.

Ensure the mixing bowl for whipped cream is chilled for best results. Trifles are best made the day of serving but can be prepped a day in advance without the final garnish.
