  • 1 teaspoon Vanilla Extract Use pure vanilla for best taste.
  • 1/4 teaspoon Cream of Tartar Optional; stabilizes whipped cream.
For the Berry Layer
  • 1 cup Red Currants Can be replaced with other small berries.
  • 1 cup Pomegranate Arils Substitute with cherries if needed.
  • 1 cup Raspberries Fresh and vibrant.
  • 1 cup Strawberries Ensure they are hulled and sliced.

Equipment

  • Oven
  • Mixing bowl
  • Trifle Bowl
  • hand mixer

Method

Preparation
  1. Prepare the Profiteroles by making them from scratch or thawing store-bought ones. Preheat oven to 425°F (220°C). Pipe or scoop dough onto a lined baking sheet and bake for 20-25 minutes.
  2. In a chilled mixing bowl, combine whipping cream, sugar, and vanilla extract. Beat on high speed until stiff peaks form, about 3-5 minutes. Optionally, add cream of tartar.
  3. Take a large trifle bowl and pipe a layer of whipped cream at the bottom. This will act as a base for the profiteroles.
  4. Layer the cooled profiteroles on the whipped cream, pressing them down lightly.
  5. Top the profiteroles with a mix of chosen berries, arranging them colorfully.
  6. Repeat the layering steps two more times, finishing with a final layer of berries on top.
  7. Pipe decorative dollops of whipped cream on top of the berries and garnish with mint leaves. Cover and refrigerate for at least 2 hours before serving.
