  • 1 cup Feta Cheese crumbled
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano or Italian seasoning

  • to taste Black Pepper
For Serving
  • 1 bunch Optional Fresh Herbs like dill or mint
  • 4 pieces Toasted Pita Triangles for scooping

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil.
  2. In the prepared baking dish, combine chicken, cherry tomatoes, zucchini, and red onion. Toss gently.
  3. Drizzle with olive oil, sprinkle with oregano, salt, and black pepper, and toss until well-coated.
  4. Spread the tzatziki sauce evenly over the chicken and vegetables, mixing gently.
  5. Bake uncovered for 30-35 minutes until chicken is cooked through and vegetables are tender.
  6. Sprinkle feta cheese on top, let rest for a few minutes, then serve.
