- Heat a splash of oil in a medium saucepan over medium heat. Add chopped onion, minced garlic, and diced habaneros. Sauté for 3–4 minutes until fragrant.
- Add chopped pineapple, apple cider vinegar, water, lime juice, and salt to the saucepan. Stir and bring to a gentle simmer for 10–15 minutes.
- Continue cooking until pineapple softens and mixture reduces slightly, about 10–15 minutes.
- Remove from heat and transfer to a blender. Blend until smooth, adjusting thickness with water if necessary.
