  • 2 tablespoons Olive Oil
  • 2 tablespoons Honey or agave/maple syrup for vegan option
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
Optional Additions
  • 1 small Jalapeño finely minced, seeds removed for milder flavor

Method
 

Preparation
  1. Gather all your fresh ingredients. Dice the ripe pineapple, slice the cucumber, and red onion thinly. Set aside in a large mixing bowl.
  2. In a separate bowl, combine lime juice, olive oil, and honey. Whisk together until emulsified.
  3. Pour the dressing over the salad ingredients in the mixing bowl. Gently toss to coat.
  4. Sprinkle in chopped cilantro, salt, and pepper. Fold into the salad gently.
  5. If using jalapeño, fold it into the salad evenly.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Before serving, give a gentle toss, taste, and adjust seasoning if necessary.
