  • 1 tsp Salt for seasoning
  • 1/2 tsp Black Pepper adjust to taste
  • 1 tsp Garlic Powder for flavor
  • 1 tsp Onion Powder
  • 2 tbsp Olive Oil for cooking
For the Sauce
  • 1 cup Salsa homemade for best flavor
For the Topping
  • 1 cup Monterey Jack Cheese or mozzarella/cheddar
  • 4 slices Bacon turkey bacon for a lighter option
  • 2 tbsp Green Onions chopped, can substitute with chives or shallots

Method
 

Step-by-Step Instructions
  1. Boil pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and set aside.
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder. Let sit for a few minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-7 minutes on each side until golden brown and cooked through.
  4. Add salsa to the skillet and stir to combine. Simmer for 3-5 minutes until the salsa thickens.
  5. Slice cooked chicken and stir into the salsa mixture, cooking for another 2-3 minutes.
  6. Add drained spaghetti to the skillet and toss to combine with the chicken and salsa.
  7. Sprinkle Monterey Jack cheese on top and cover to melt, about 2-3 minutes.
  8. Garnish with crumbled bacon and green onions before serving.
