Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare for baking by greasing four mini loaf pans or one large loaf pan with a light coating of oil.
  2. In a large mixing bowl, combine the peeled and chopped fresh peaches, oil, sugar, eggs, sour cream, and vanilla extract. Blend until well combined.
  3. Gradually sift in the all-purpose flour, baking soda, and salt to the wet mixture. Gently fold until just combined.
  4. Pour the batter evenly into the greased loaf pans, filling them about 2/3 full.
  5. Place the loaf pans in the preheated oven and bake mini loaves for about 25-30 minutes or a large loaf for 50-55 minutes.
  6. Allow the bread to cool for about 10-15 minutes in the pans before transferring to a wire rack.
  7. Slice and serve once cooled to room temperature. Enjoy warm!
