Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease four mini loaf pans or one large loaf pan.
  2. In a large mixing bowl, combine the chopped fresh peaches, oil, sugar, eggs, sour cream, and vanilla extract. Whisk until smooth.
  3. In another bowl, sift together the flour, baking soda, and salt. Gradually add to the wet ingredients, folding gently with a spatula until just combined.
  4. Evenly divide the batter into the prepared loaf pans, filling them about 2/3 full.
  5. Place the loaf pans in the oven and bake mini loaves for 25-30 minutes, or the large loaf for 50-55 minutes.
  6. Once baked, cool the pans for about 10 minutes before transferring the loaves to a wire rack to cool completely.
