- Preheat your oven to 350°F (175°C) and grease four mini loaf pans or one large loaf pan.
- In a large mixing bowl, combine the chopped fresh peaches, oil, sugar, eggs, sour cream, and vanilla extract. Whisk until smooth.
- In another bowl, sift together the flour, baking soda, and salt. Gradually add to the wet ingredients, folding gently with a spatula until just combined.
- Evenly divide the batter into the prepared loaf pans, filling them about 2/3 full.
- Place the loaf pans in the oven and bake mini loaves for 25-30 minutes, or the large loaf for 50-55 minutes.
- Once baked, cool the pans for about 10 minutes before transferring the loaves to a wire rack to cool completely.
