  3. Mix the Ingredients: In the bowl with cooled pasta, combine sautéed corn, mayonnaise, lime juice, and cotija cheese. If desired, add minced jalapeño and cilantro, stirring until mixed.
  4. Season and Chill: Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes.
