  • 1 teaspoon dried basil Can substitute with Italian seasoning
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon black pepper Adjust to taste
For the Cheese Topping
  • 1 cup shredded mozzarella cheese Can substitute with feta
  • 1/4 cup grated Parmesan cheese Nutritional yeast can be a dairy-free substitute
For the Garnish
  • 1/4 cup chopped fresh parsley Can substitute with basil

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine bite-sized chicken chunks and sliced zucchini. Drizzle with olive oil and add minced garlic, lemon juice, dried oregano, dried basil, salt, and pepper. Toss until well-coated.
  3. Transfer the chicken and zucchini mixture into a 9x13-inch baking dish, distributing evenly.
  4. Sprinkle mozzarella cheese over the top, followed by grated Parmesan cheese.
  5. Bake uncovered for 25-30 minutes, until chicken reaches 165°F and cheese is golden and bubbly.
  6. Remove from oven, let cool, and garnish with chopped fresh parsley before serving.
