  • 1 cup Diced Cucumber Shredded lettuce can be used.

For the Tacos
  • 8 pieces Corn Tortillas or Soft Taco Shells Substitute with whole wheat or lettuce wraps for a low-carb option.
  • 1/4 cup Fresh Parsley Cilantro can be substituted or omitted.

Preparation Steps

  2. Preheat your grill or a skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing.
  3. In a separate bowl, whisk together the Greek yogurt and fresh lemon juice until smooth. Set aside.
  4. In a large bowl, combine diced tomatoes, cucumber, red onion, olives, and feta cheese. Toss gently to mix.
  5. Warm your tortillas in a skillet for 20-30 seconds on each side until pliable.
  6. Assemble your tacos by placing a tortilla down, adding sliced chicken, fresh vegetable topping, and drizzling the yogurt sauce on top.
