- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together softened butter and granulated sugar until smooth and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the creamed mixture, beating until well combined, roughly 1-2 minutes.
- Mix in the vegetable oil and brown sugar until well-blended, about 1-2 minutes.
- In a separate bowl, whisk together the flour, baking soda, and baking powder. Gradually add to the wet mixture; mix until just combined.
- Gently fold in the Lucky Charms marshmallows and white chocolate chips, reserving some marshmallows for topping.
- Scoop out dough balls and place them on prepared baking sheets about 2 inches apart.
- Bake for 9-11 minutes until edges are set and centers look glossy.
- Cool on baking sheets for 3-5 minutes before transferring to a wire rack.
