Method
 

Step‑By‑Step Instructions
  1. Soak the beans overnight in water, then drain and rinse before cooking.
  2. In a pot, heat olive oil and brown the sliced smoked sausage for about 5 minutes. Set aside.
  3. Sauté the diced onion, green bell pepper, and celery for 5 minutes. Add minced garlic and spices, sauté for another 30 seconds.
  4. Add the drained kidney beans and bay leaves to the pot, along with water or chicken broth. Bring to boil, then simmer for 2 to 3 hours.
  5. Mash some beans against the pot's side for a creamy texture.
  6. Return the sausage to the pot and add Worcestershire sauce, simmer for an additional 10 minutes.
  7. Remove bay leaves and serve over cooked rice, garnished with green onions and hot sauce.
