- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown your choice of ground beef or ground turkey for about 5–7 minutes until fully cooked. Drain excess fat and mix in taco seasoning.
- Sauté diced onions and bell peppers in the same skillet for 3–4 minutes. Stir in corn and black beans, cooking for an additional 2 minutes. Season with salt and pepper to taste.
- Grease a 9x13-inch baking dish. Layer cooked meat evenly at the bottom, followed by sautéed vegetables. Sprinkle cheddar and Mexican blend cheese over the top.
- Arrange frozen tater tots neatly over the cheese layer.
- Bake the assembled casserole in the oven for 25–30 minutes until tater tots are golden brown and cheese is bubbly.
- Remove from oven, let cool for a few minutes, then top with sour cream, cilantro, and jalapeño slices. Serve hot.
