Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).

  3. Sauté diced onions and bell peppers in the same skillet for 3–4 minutes. Stir in corn and black beans, cooking for an additional 2 minutes. Season with salt and pepper to taste.
  4. Grease a 9x13-inch baking dish. Layer cooked meat evenly at the bottom, followed by sautéed vegetables. Sprinkle cheddar and Mexican blend cheese over the top.
  5. Arrange frozen tater tots neatly over the cheese layer.
  6. Bake the assembled casserole in the oven for 25–30 minutes until tater tots are golden brown and cheese is bubbly.
  7. Remove from oven, let cool for a few minutes, then top with sour cream, cilantro, and jalapeño slices. Serve hot.
