Preparation Steps
- Place the room-temperature cream cheese into a mixing bowl. Beat until light and fluffy, about 2-3 minutes.
- Add in the large egg and vanilla extract, mixing until fully integrated and smooth.
- In a separate bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt until there are no lumps.
- Gradually add the dry ingredients into the wet mixture, folding gently until combined.
- Cover the bowl and chill the dough in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper. Scoop out the dough, spacing each ball about 2 inches apart.
- Bake the cookies for about 15 minutes until edges are lightly golden and centers are soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack for another 10-15 minutes.
