Making the Focaccia
- Prepare the yeast mixture by combining warm water and sugar, then add yeast and let sit for 5 minutes.
- Make the dough by mixing in the flours, salt, and oil until a sticky dough forms.
- Cover the dough and let it rise until doubled in size, about 1 hour.
- Shape the dough into a rectangle and transfer it to a greased pan, let rise again for 1 hour.
- Preheat oven to 425°F, then poke dimples in the dough.
- Spread raspberry preserves over the dough and bake for 18-22 minutes.
- Fill the dimples with more raspberry preserves after baking.
- Prepare the glaze by mixing confectioners' sugar and milk, then drizzle over the focaccia.
- Cut into squares and serve warm.
