Method
 

Making the Focaccia
  1. Prepare the yeast mixture by combining warm water and sugar, then add yeast and let sit for 5 minutes.
  2. Make the dough by mixing in the flours, salt, and oil until a sticky dough forms.
  3. Cover the dough and let it rise until doubled in size, about 1 hour.
  4. Shape the dough into a rectangle and transfer it to a greased pan, let rise again for 1 hour.
  5. Preheat oven to 425°F, then poke dimples in the dough.
  6. Spread raspberry preserves over the dough and bake for 18-22 minutes.
  7. Fill the dimples with more raspberry preserves after baking.
  8. Prepare the glaze by mixing confectioners' sugar and milk, then drizzle over the focaccia.
  9. Cut into squares and serve warm.
