  • 8 ounces crab meat lump or imitation
  • 1 medium cucumber seedless, sliced into matchsticks
  • 4 cups lettuce romaine or butter lettuce, shredded
For the Dressing
  • ½ cup mayonnaise Kewpie preferred
  • 2 tablespoons Sriracha adjust to taste
  • 1 tablespoon lemon juice fresh
  • 1 tablespoon mirin or sake/rice vinegar
For the Crunch
  • ½ cup panko breadcrumbs gluten-free if needed
  • 1 tablespoon butter for browning panko
  • 1 tablespoon sesame seeds for garnish

Method
 

Step-by-Step Instructions
  1. In a small skillet, melt 1 tablespoon of butter over medium heat. Add ½ cup of panko breadcrumbs and sauté for about 5 minutes until golden brown.
  2. In a mixing bowl, combine ½ cup of mayonnaise, 2 tablespoons of Sriracha, 1 tablespoon of mirin, and juice of half a lemon. Whisk until smooth and chill.
  3. Slice the cucumber into matchsticks and place in a medium bowl.
  4. Prepare crab meat by shredding imitation crab or gently separating lump crab meat. Add to the cucumber bowl.
  5. Pour the chilled dressing over cucumber and crab. Fold gently until combined.
  6. Arrange shredded lettuce on plates, top with crab and cucumber mixture, and sprinkle with browned panko and sesame seeds before serving.
  7. Serve immediately to enjoy the crunchy texture of the salad.
