Prepare Mascarpone Cold Foam
- Soften 1 tablespoon of mascarpone cheese in the microwave for 5 seconds. In a mixing bowl, whip together with 2 tablespoons of heavy cream, ¾ cup of whole milk, and 1 tablespoon of vanilla syrup until soft peaks form.
Prepare Latte Base
- Combine ¾ cup of whole milk, 1 tablespoon of vanilla syrup, and 2 teaspoons of unsweetened cocoa powder in a small saucepan. Optionally add ¼ teaspoon of rum extract. Heat gently over medium-low while whisking until warm.
Brew Coffee/Espresso
- Brew 2 oz of espresso or prepare 8 oz of freshly brewed coffee in a large mug.
Combine
- Pour the warm chocolate milk mixture over the brewed espresso or coffee in your large mug. Stir gently to combine.
Top with Cold Foam
- Spoon the mascarpone cold foam on top of the latte mixture, ensuring it sits comfortably.
Garnish & Serve
- Dust the top with unsweetened cocoa powder and serve with a lady finger cookie on the side.
