Method
 

Prepare Mascarpone Cold Foam
  1. Soften 1 tablespoon of mascarpone cheese in the microwave for 5 seconds. In a mixing bowl, whip together with 2 tablespoons of heavy cream, ¾ cup of whole milk, and 1 tablespoon of vanilla syrup until soft peaks form.
Prepare Latte Base
  1. Combine ¾ cup of whole milk, 1 tablespoon of vanilla syrup, and 2 teaspoons of unsweetened cocoa powder in a small saucepan. Optionally add ¼ teaspoon of rum extract. Heat gently over medium-low while whisking until warm.
Brew Coffee/Espresso
  1. Brew 2 oz of espresso or prepare 8 oz of freshly brewed coffee in a large mug.
Combine
  1. Pour the warm chocolate milk mixture over the brewed espresso or coffee in your large mug. Stir gently to combine.
Top with Cold Foam
  1. Spoon the mascarpone cold foam on top of the latte mixture, ensuring it sits comfortably.
Garnish & Serve
  1. Dust the top with unsweetened cocoa powder and serve with a lady finger cookie on the side.
