- Preheat your oven to 300°F (150°C) and arrange five 4-ounce glass jars on a baking sheet.
- In a medium saucepan, combine granulated sugar and water over medium heat and stir gently until caramelized.
- In a large mixing bowl, whisk together eggs and egg yolk until frothy, then heat milk and cream in a separate saucepan.
- Slowly pour the warm milk mixture into the egg mixture, whisking continuously, then strain through a fine-mesh sieve.
- Fill each jar with the pudding mixture, pour boiling water into the baking pan halfway up the sides of the jars, and bake.
- Let the jars cool to room temperature, then cover and refrigerate for at least 3 hours.
