- Preheat your oven to 350°F (175°C) and prepare a 1.5QT loaf pan by greasing it.
- Combine white sugar, room temperature eggs, and melted unsalted butter in a large mixing bowl. Cream on medium speed for 2-3 minutes.
- Stir in 2% milk and Jell-O Pistachio Pudding mix until blended, then add baking powder and salt and mix on low until just combined.
- Fold in all-purpose flour gradually, mixing until there are no visible dry flour clumps.
- Pour the batter into the greased loaf pan, smoothing the top evenly. Leave space at the top for rising.
- Bake for 40-50 minutes, checking for doneness with a toothpick. It should come out clean or with a few moist crumbs.
