Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the breakfast mini links and cook for 3-4 minutes until browned and heated through.
  3. In a bowl, whisk together 4 large eggs and a splash of whole milk. Season with salt and pepper and scramble in the skillet for 2-3 minutes until just cooked.
  4. Mix equal parts honey and Dijon mustard for the spread. Split croissants and spread the mixture on the bottom halves.
  5. Layer the scrambled eggs and a slice of cheddar cheese on croissant bottoms.
  6. Bake the croissant bottoms in the oven for 4-5 minutes until the cheese melts.
  7. Add crispy bacon and mini links on top of the cheese and sprinkle chives before placing the tops of the croissants back on.
  8. Return the sandwiches to the oven for another 8-10 minutes until golden brown and crispy.
