Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the breakfast mini links and cook for 3-4 minutes until browned and heated through.
- In a bowl, whisk together 4 large eggs and a splash of whole milk. Season with salt and pepper and scramble in the skillet for 2-3 minutes until just cooked.
- Mix equal parts honey and Dijon mustard for the spread. Split croissants and spread the mixture on the bottom halves.
- Layer the scrambled eggs and a slice of cheddar cheese on croissant bottoms.
- Bake the croissant bottoms in the oven for 4-5 minutes until the cheese melts.
- Add crispy bacon and mini links on top of the cheese and sprinkle chives before placing the tops of the croissants back on.
- Return the sandwiches to the oven for another 8-10 minutes until golden brown and crispy.
