Step-by-Step Instructions for Greggs Chicken Bake
- Cut the chicken breasts into bite-sized chunks and season with salt and black pepper. Set aside.
- Heat a non-stick pan over medium heat and add a splash of vegetable oil.
- Add the seasoned chicken to the pan and cook for 2-3 minutes on each side until golden brown.
- Stir in chicken stock, cream cheese, and double cream into the pan. Cook for an additional 2 minutes.
- Mix cornflour with a splash of cold water and gradually stir into the chicken mixture, cooking until thickened.
- Add dried herbs and season to taste. Remove from heat and allow to cool completely.
- Roll out the puff pastry and cut into six equal rectangles.
- Place filling on half of each pastry rectangle, fold over and seal tightly with fork.
