Ingredients
  

For the Noodles
  • 200 g noodles your choice; gluten-free noodles make a lighter option.
For the Sauce
  • 3 tablespoons unsalted butter adds richness; swap with vegan butter for dairy-free.
  • 2 tablespoons miso paste the star of umami flavor; both red and white work.
  • 1 tablespoon soy sauce enhances depth and saltiness; tamari is gluten-free.
  • 1 teaspoon sesame oil optional; for a nutty aroma.
  • salt to taste.
For the Garnish
  • 1 green onion finely sliced; adds fresh crunch and color.

Method
 

Cooking Steps
  1. In a large pot, bring salted water to a rolling boil over high heat. Add 200g of noodles, cooking according to package instructions for about 8–10 minutes. Drain, reserving 1/4 cup of starchy cooking water.
  2. In a medium pan over medium heat, melt 3 tablespoons of unsalted butter slowly, about 2–3 minutes.
  3. Stir in 2 tablespoons of miso paste and 1 tablespoon of soy sauce into the melted butter. Mix continuously for about 2–3 minutes until smooth.
  4. Add the drained noodles to the pan with the miso sauce, tossing gently to coat. Cook for another 1–2 minutes, adding reserved pasta water if needed.
  5. Stir in 1 teaspoon of sesame oil if desired, adjusting salt to your liking. Toss to distribute evenly.
  6. Serve warm, garnished with finely sliced green onion. Optionally drizzle with extra sesame oil or sprinkle with sesame seeds.
