  • 1 teaspoon Lime Zest Use organic limes.
  • 2 cloves Garlic Minced.

For the Rice Base
  • 2 cups Cooked Rice White or brown, quinoa can be a substitute.
  • 1/4 cup Fresh Coriander Chopped, parsley can be used if unavailable.
For the Avocado Layer
  • 2 pieces Ripe Avocados Select ones that yield slightly when pressed.

Method
 

Step‑by‑Step Instructions
  1. Season the chicken breasts with salt and pepper. In a bowl, whisk together honey, lime juice, zest, and garlic to create the glaze.
  2. Heat oil in a pan over medium-high heat. Cook chicken for 6-7 minutes on each side, brushing glaze during the last 2 minutes.
  3. Check chicken internal temperature (should be at least 71°C), remove, and rest for 5 minutes before slicing.
  4. Mix cooked rice with coriander and lime juice, seasoning with salt and pepper.
  5. Slice avocados and toss with lime juice, salt and pepper.
  6. Layer rice, avocado, and chicken in a ring mold, pressing gently.
  7. Remove mold and drizzle remaining glaze around the plate.
