Preparation
- Begin by rinsing and drying the fresh figs thoroughly. Remove the stems and chop half of them into small pieces for the fig sauce.
- In a large mixing bowl, combine the ricotta cheese, heavy cream, granulated sugar, and vanilla extract. Blend until smooth and creamy.
- Take the chopped figs and place them in a separate bowl. Drizzle honey over the figs and gently mix.
- Fold a portion of the fig mixture into the ricotta blend, then pour into an ice cream maker or an airtight container.
- If using an ice cream maker, churn for 20-25 minutes until fluffy. If using an airtight container, stir every hour until firm.
- Scoop the ice cream into bowls or cones. Drizzle with remaining fig sauce and honey, garnishing with whole figs or crushed nuts.
