Ingredients

Ice Cream Base
  • 1 cup Ricotta Cheese Substitute with mascarpone for richer flavor.
  • 1 cup Heavy Cream Use half-and-half for a lighter version.
  • 3/4 cup Granulated Sugar Can be replaced with honey or maple syrup.
  • 1 teaspoon Vanilla Extract Optional, omit for a simpler taste.
Fig Sauce
  • 1 cup Fresh Figs Use frozen figs if fresh are unavailable.
  • 1/4 cup Honey Can be replaced with agave syrup.

Equipment

  • Ice Cream Maker

Method

Preparation
  1. Begin by rinsing and drying the fresh figs thoroughly. Remove the stems and chop half of them into small pieces for the fig sauce.
  2. In a large mixing bowl, combine the ricotta cheese, heavy cream, granulated sugar, and vanilla extract. Blend until smooth and creamy.
  3. Take the chopped figs and place them in a separate bowl. Drizzle honey over the figs and gently mix.
  4. Fold a portion of the fig mixture into the ricotta blend, then pour into an ice cream maker or an airtight container.
  5. If using an ice cream maker, churn for 20-25 minutes until fluffy. If using an airtight container, stir every hour until firm.
  6. Scoop the ice cream into bowls or cones. Drizzle with remaining fig sauce and honey, garnishing with whole figs or crushed nuts.
