Method
 

Preparation Steps
  1. Preheat the oven to 325°F (163°C) and prepare baking sheets with parchment paper.
  2. In a stand mixer, cream together butter, brown sugar, and molasses for about 2 minutes.
  3. Add egg and vanilla, mixing until fully incorporated, about 1 minute.
  4. Gradually mix in the flour, oats, baking soda, and salt until combined.
  5. Scoop portions of cookie dough onto baking sheets, leaving 2 inches apart.
  6. Bake cookies for 9 to 11 minutes, then cool for 5 minutes on baking sheets.
  7. Beat together all filling ingredients until creamy and smooth.
  8. Spread cream filling onto a cookie and top with another cookie to form a sandwich.
  9. Store cookies in an airtight container at room temperature for up to 5 days or refrigerate for a week.
