Ingredients
  

For the Chicken
  • 1 pound chicken thighs or chicken breast
  • 1 cup buttermilk or plain yogurt mixed with vinegar
  • to taste salt

  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 teaspoon paprika smoked paprika for deeper flavor
  • ¼ cup cornstarch or additional flour
  • ½ cup all-purpose flour or gluten-free flour
  • ½ cup oil vegetable or canola for frying
For the Sauce
  • 2 tablespoons gochujang reduce for less heat
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon brown sugar or granulated sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil use sparingly
  • to taste fresh garlic optional
  • to taste fresh ginger optional
For Assembly
  • 4 pieces bao buns store-bought or homemade
  • 1 cup cucumber sliced
  • 1 cup carrots sliced
  • 1 cup red cabbage sliced
  • ¼ cup green onions sliced
  • 2 tablespoons sesame seeds optional
  • 2 tablespoons mayonnaise optional

Method
 

Preparation Steps
  1. Marinate the chicken in buttermilk for at least 20 minutes.
  2. In a bowl, combine all-purpose flour, cornstarch, garlic powder, paprika, salt, and pepper.
  3. Mix sauce ingredients together until combined and rich.
  4. Coat marinated chicken in the flour mixture evenly.
  5. Fry the coated chicken in hot oil until golden brown, about 5-7 minutes each side.
  6. Warm the sauce and toss the fried chicken in it until well-coated.
  7. Steam the bao buns according to package instructions.
  8. Assemble the buns by filling with glazed chicken and fresh veggies.
  9. Serve immediately while warm.
