Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Sift together the all-purpose flour, cocoa powder, powdered sugar, and salt in a large mixing bowl.
  3. Beat the unsalted butter and vanilla extract in a separate bowl until smooth and creamy for 3-4 minutes.
  4. Gradually add the dry mixture to the creamed butter, mixing until a dough forms.
  5. Chill the dough in the refrigerator for about 15-30 minutes if too soft to handle.
  6. Roll out the dough on a clean surface, cut into 3x3 squares, and prick with a fork.
  7. Freeze squares for 15-20 minutes before baking for 14-16 minutes until edges are set.
  8. Pair cooled cookies, add a scoop of ice cream to one, and press another on top.
  9. Wrap each sandwich in foil or parchment and store in the freezer for up to a month.
