Step-by-Step Instructions for Hibiscus Lemon Bars
- Preheat your oven to 350°F (175°C) and gather all ingredients and tools.
- In a mixing bowl, beat together 0.5 cup softened butter, 1 cup granulated sugar, and 1 tablespoon vanilla bean paste on medium speed for 3-4 minutes.
- Gradually add 1.5 cups all-purpose flour and a pinch of salt, mixing just until combined.
- Press the dough firmly into the bottom of a greased baking pan and refrigerate for 15 minutes.
- Bake the crust in the preheated oven for about 15 minutes until lightly golden brown.
- While the crust bakes, steep 1 cup dried hibiscus flowers in 0.5 cup fresh lemon juice for 15 minutes, then strain out the flowers.
- Whisk together 3 eggs and 1 cup granulated sugar until frothy, then add the hibiscus-infused lemon juice and blend well.
- Pour the filling over the baked crust and return to the oven to bake for 20-25 minutes until set.
- Allow the bars to cool completely in the pan, dust with confectioner’s sugar, and slice into squares.
