Ingredients
  

For the Pot Roast
  • 4 slices Bacon or Pancetta; optional for a leaner dish.
  • 3 pounds Beef Chuck recommended for its marbling.
  • 1 tsp Salt adjust to taste.
  • 1 tsp Pepper adjust to taste.
  • 1 medium Onion diced.
  • 2 medium Carrots diced.
  • 2 stalks Celery diced.
  • 4 cloves Garlic chopped.
  • 1 tsp Red Pepper Flakes optional.
  • 4 cups Beef Broth can substitute with dry wine.
  • 28 ounces Crushed Tomatoes essential for the sauce.
  • 1 tsp Thyme fresh or dried.
  • 1 tsp Rosemary fresh or dried.
  • 1 tbsp Italian Seasoning can substitute with oregano.
  • 2 leaves Bay Leaves remove before serving.

Cooking Steps
  1. Cook the Bacon in a Dutch oven over medium heat until crispy, about 5–7 minutes. Remove and set aside.
  2. Sear the Beef seasoned with salt and pepper in the bacon grease over medium-high heat for 4–6 minutes on each side.
  3. Sauté diced onion, carrot, and celery for 7–10 minutes until softened.
  4. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  5. Combine beef broth, crushed tomatoes, thyme, rosemary, and Italian seasoning; add bacon back.
  6. Nestle the seared beef in the pot; optionally, simmer on stovetop 2–4 hours or bake at 275°F (140°C) for 3–4 hours.
  7. Once tender, check seasoning, discard bay leaves, and serve over creamy polenta or mashed potatoes.
