  • 1 pound Ground Beef 80/20 recommended
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 medium Red Bell Pepper optional, diced
  • 1 Jalapeño optional, diced
  • 1 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Tomato Paste
  • 1/4 cup Beef Broth water can be substituted
For the Quesadilla
  • 4 large Flour Tortillas
  • 2 cups Shredded Cheese Mexican blend recommended

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat a drizzle of oil over medium heat. Add ground beef and diced onion, cooking for about 5-7 minutes until browned.
  2. Lower the heat slightly and add minced garlic, diced red bell pepper, and jalapeño (if using). Sauté for 2-3 minutes.
  3. Sprinkle in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir well and cook for another 1-2 minutes.
  4. Add tomato paste and beef broth, stir to combine, and simmer for 3-5 minutes until thickened.
  5. Lay a tortilla on a flat surface. On one half, place a layer of beef mixture and shredded cheese. Fold the tortilla over.
  6. Heat a non-stick skillet over medium heat. Grease lightly and cook folded quesadillas for 2-3 minutes on each side until golden brown and crispy.
  7. Transfer cooked quesadillas to a cutting board and let rest for a few minutes before slicing into wedges.
