  • 8 oz Mushrooms (Cremini) White mushrooms can be substituted or omitted
  • 1 cup Snow Peas or Sugar Snap Peas Broccoli can be used as a substitute
  • to taste Salt & Pepper Essential for seasoning
  • 1/4 cup Chopped Scallions Optional for garnish
For the Savory Sauce
  • 1/2 cup Beef Broth or Water Vegetable broth is a vegetarian option
  • 2 tbsp Hoisin Sauce Use tamari for gluten-free option
  • 1/4 cup Low Sodium Soy Sauce Coconut aminos for soy-free version
  • 1 tbsp Sriracha Sauce Reduce or omit for milder flavor
  • 1 tbsp Apple Cider Vinegar or Rice Vinegar Both can be interchanged
  • 1 tbsp Brown Sugar Can be swapped with honey or maple syrup
  • 1 tbsp Cornstarch Arrowroot powder as gluten-free substitute
  • 1 tbsp Fresh Ginger Ground ginger can be an alternative
  • 2 cloves Garlic Garlic powder can be used if fresh isn't available

Method
 

Step-by-Step Instructions
  1. Prepare Ingredients: Chop all vegetables into bite-sized pieces and measure out sauce ingredients.
  2. Cook Noodles: Boil salted water, add lo mein noodles and cook for 4-5 minutes until al dente. Drain and keep warm.
  3. Brown the Beef: In a skillet, heat oil over medium-high heat, add ground beef and sauté for 8-10 minutes until browned.
  4. Sauté Onions: Add olive oil and chopped onion to the same skillet, sauté for 1-2 minutes until translucent.
  5. Add Remaining Veggies: Stir in red bell pepper, mushrooms, and snow peas. Sauté for 3-4 minutes until tender-crisp.
  6. Combine Beef and Sauce: Return beef, pour in sauce mixture and let simmer for 30 seconds.
  7. Toss in Noodles: Remove from heat and add cooked noodles, tossing everything together. Season with salt and pepper.
  8. Serve and Garnish: Serve hot in bowls and garnish with chopped scallions if desired.
