  • 0.25 cup Extra Virgin Olive Oil high quality
  • 2 tablespoons Honey or maple syrup
  • 0.25 cup Red Wine Vinegar or apple cider vinegar
  • 0.25 cup Soy Sauce low-sodium preferred
  • 3 cloves Garlic minced
  • 1 teaspoon Black Pepper adjust to taste
For Grilled Zucchini
  • 2 medium Zucchini sliced into ½-inch thick pieces
For Whipped Feta
  • 8 ounces Feta Cheese full-fat
  • 2 tablespoons Heavy Cream or Greek yogurt
  • 0.5 tablespoon Lemon Juice fresh is best
Optional Garnishes
  • 1 teaspoon Cumin Seeds toast for enhanced flavor
  • 1 tablespoon Sesame Seeds sprinkle just before serving

Step-by-Step Instructions
  1. In a bowl, whisk together the olive oil, honey, minced garlic, red wine vinegar, soy sauce, and black pepper. Pour over the flank steak and marinate.
  2. In a food processor, blend feta cheese, heavy cream, and lemon juice until smooth and creamy. Adjust texture with more cream if needed.
  3. Preheat the grill to between 450°F and 500°F for high heat cooking.
  4. Remove steak from marinade and grill for 3-5 minutes per side until medium-rare. Grill zucchini alongside for 5-10 minutes until tender.
  5. Let the steak rest for 5 minutes, then slice against the grain and serve with grilled zucchini and whipped feta. Top with optional garnishes.
