Step-by-Step Instructions for Grilled Pineapple
  1. Slice off the top and bottom of the pineapple, stand upright, and trim away the skin.
  2. Cut the pineapple into ½ to ¾ inch thick rings or spears, removing the core if using rings.
  3. In a bowl, mix melted butter or coconut oil with brown sugar until well combined.
  4. Brush the mixture generously on both sides of each pineapple slice.
  5. Optionally, sprinkle ground cinnamon or chili powder on each slice.
  6. Preheat your grill or grill pan to medium-high heat, about 400°F (200°C).
  7. Grill the pineapple slices for 3–4 minutes on one side until grill marks appear.
  8. Flip the slices and grill for an additional 3–4 minutes until tender and caramelized.
  9. Remove from grill, let rest for a minute, serve with ice cream and fresh mint.
