Method
 

Preparation Steps
  1. Pat dry the chicken thighs with paper towels and let them sit at room temperature.
  2. In a mixing bowl, combine Greek yogurt, dill, minced shallots, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and dried oregano. Whisk until smooth.
  3. Coat the chicken thighs with the marinade, cover the bowl with plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat the grill to medium-high heat (about 400°F) for 15 minutes.
  5. Place the marinated chicken thighs on the grill, spaced apart. Grill for 8-10 minutes, flipping halfway.
  6. Check the internal temperature of the chicken; it should reach 165°F.
  7. Remove the chicken from the grill and let it rest for 5 minutes before serving.
