- Begin by washing and thoroughly drying your apples. Slice into ¼-inch thick rounds and remove seeds. Set aside.
- Line a baking sheet with parchment paper. Arrange your workspace for quick access to ingredients.
- Combine granulated sugar and water in a heavy saucepan over medium heat. Stir until sugar dissolves. Boil without stirring until syrup reaches light amber color (around 300°F), about 10-12 minutes.
- Remove saucepan from heat. Quickly dip each apple slice into syrup, letting excess drip off before placing on parchment.
- Immediately sprinkle thyme leaves and sea salt on the candied slices.
- Let candied apple slices cool on parchment paper for 20-30 minutes until syrup hardens.
