  2. Divide the mixture into four equal portions and shape into patties about 1/2 inch thick, creating an indentation in the center.
  3. Heat a large skillet over medium-high heat, coating lightly with oil. Cook the patties for 4-5 minutes on each side until golden brown and cooked through (internal temp 165°F).
  4. In a separate bowl, mix chopped kimchi, crumbled bacon, brown sugar, and rice vinegar until well combined, forming the kimchi bacon jam.
  5. Slice the burger buns in half and toast them briefly on the skillet. Assemble by placing a patty on the bun bottom, topping with kimchi bacon jam, and optionally sprinkling sesame seeds before adding the top bun.
