  • 1 cup Dark brown sugar
  • 2 Eggs Can substitute with flax eggs.
  • 1 cup Molasses Can substitute with honey or agave.
  • 1 cup Hot water
  • 1 cup Buttermilk Can substitute with regular milk.
For the Frosting
  • 4 cups Powdered sugar Sifted.
  • 1/4 cup Milk Adjust for thickness.
  • 1 teaspoon Vanilla extract Use pure for best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
  3. In another bowl, cream unsalted butter, granulated sugar, and dark brown sugar until light and fluffy.
  4. Beat in eggs one at a time until smooth.
  5. Mix in molasses until fully combined.
  6. Gradually alternate adding dry ingredients with hot water and buttermilk, mixing until combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 30 to 35 minutes until a toothpick comes out clean.
  9. Allow cake to cool in pan for 10 minutes before transferring to a wire rack.
  10. Prepare the frosting by creaming butter, then adding powdered sugar, molasses, and cinnamon until smooth.
  11. Adjust frosting consistency with milk until spreadable.
  12. Once the cake is fully cooled, frost the top with the cinnamon molasses frosting.
  13. Decorate as desired and serve.
