  • 1 pound Boneless Skinless Chicken Breasts Diced
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Ginger Grated
  • 6 cups Chicken Broth Or vegetable broth for vegetarian version
For the Vegetables
  • 1 cup Long-Grain White Rice
  • 2 medium Carrots Sliced
  • 1 medium Bell Pepper Diced
For the Seasoning
  • 3 tablespoons Soy Sauce Or tamari for gluten-free
  • 2 tablespoons Lime Juice
  • 1 each Lime Zest
  • to taste Salt
  • to taste Pepper
  • 1 bunch Fresh Cilantro Chopped for garnish

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken breasts and sauté for 5-7 minutes until golden brown.
  3. Stir in chopped onion, minced garlic, and grated ginger. Sauté for 3-4 minutes until onion is translucent.
  4. Pour in chicken broth and bring to a gentle simmer. Then add long-grain white rice.
  5. Reduce heat to low and cook for 15 minutes, stirring occasionally.
  6. Add sliced carrots and diced bell pepper to the pot. Simmer for an additional 5-7 minutes.
  7. Mix in soy sauce, lime juice, and lime zest. Adjust seasoning with salt and pepper as needed.
  8. Serve hot, garnished with freshly chopped cilantro.
