  • 1 cup Parmesan Cheese Roman can replace for a different taste
  • 1 cup Panko Breadcrumbs can use regular breadcrumbs if preferred
  • 2 large Eggs essential for binding
  • 4 cloves Minced Garlic adjust according to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 cup Whole Milk can swap with plant milk
  • 2 tablespoons Unsalted Butter
For the Glaze
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley chopped for garnishing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and line a baking sheet or loaf pan with parchment paper.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk until just combined.
  3. Transfer the mixture to the prepared baking sheet or loaf pan and shape it into a loaf.
  4. Bake the meatloaf for 40-45 minutes until its internal temperature reaches 74°C (165°F).
  5. While the meatloaf bakes, melt unsalted butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant. Stir in additional Parmesan and chopped fresh parsley.
  6. Brush the glaze over the meatloaf and bake for an additional 5-7 minutes.
  7. Let the meatloaf rest for 5 minutes before slicing and garnishing with fresh parsley.
