  1. Begin by patting the salmon fillet dry and cutting it into 1½-inch cubes for even cooking. Chop the red bell pepper and red onion into 1-inch chunks, and slice zucchini into rounds if using.
  2. In a mixing bowl, melt the unsalted butter, then whisk in minced garlic, parsley, lemon juice, lemon zest, and smoked paprika. Season with salt and pepper.
  3. Toss the salmon cubes in the garlic butter mixture until fully coated. Cover and refrigerate for about 15 minutes.
  4. Thread the salmon and vegetables onto the skewers, alternating for visual appeal.
