Method
 

Preparation
  1. Wash all fruits under cold running water and pat them dry. In a large serving bowl, combine the blueberries, raspberries, sliced strawberries, diced apple, halved green grapes, and drained mandarin oranges. Drizzle lemon juice over to prevent browning.
  2. In a medium bowl, mix mascarpone cheese, plain yogurt, honey, remaining lemon juice, and vanilla extract until smooth and creamy.
  3. Pour the creamy dressing over the fruit and gently fold to combine. Serve immediately or chill in the fridge for 30 minutes.
