- In a mixing bowl, combine your leftover mashed potatoes with cream cheese, stirring until smooth. Add in eggs, Parmesan, cheddar cheese, and onion powder, blending for 2-3 minutes until fully incorporated.
- Gently fold in ⅔ cup of Italian bread crumbs into the potato mixture to make it thick yet pliable for shaping.
- Lightly oil your bunny-shaped silicone molds and sprinkle them with breadcrumbs.
- Spoon the potato mixture into the prepared molds, pressing down gently to eliminate air pockets. Sprinkle the remaining breadcrumbs on top.
