  1. In a mixing bowl, combine your leftover mashed potatoes with cream cheese, stirring until smooth. Add in eggs, Parmesan, cheddar cheese, and onion powder, blending for 2-3 minutes until fully incorporated.
  2. Gently fold in ⅔ cup of Italian bread crumbs into the potato mixture to make it thick yet pliable for shaping.
