- In a large mixing bowl, cream the softened butter and cream cheese with sugar using an electric mixer on medium speed until light and fluffy.
- Add in one large room-temperature egg along with vanilla, almond, and coconut extracts. Beat until thoroughly incorporated.
- In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add to the creamed mixture, mixing until no visible flour remains. Refrigerate the dough overnight.
- Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper.
- Form three different sized balls from chilled dough for each snowman (1-inch, ¾-inch, ½-inch) and arrange on baking sheets with 2 inches apart.
