  • 2 cups shredded chicken use rotisserie chicken for convenience
  • 8 oz cream cheese softened
  • 1 link sausage optional; Italian or Andouille sausage works well
  • 3 tablespoons green onions chopped
  • 1 cup cheddar cheese shredded; use pepper jack for added spice
  • 1 tablespoon hot sauce adjust according to spice preference
  • 1 tablespoon Cajun seasoning use a pre-mixed seasoning or create your own
For the Wrapping and Frying
  • 12 pieces egg roll wrappers spring roll wrappers as alternative if egg-free
  • 2 cups vegetable oil for frying; can substitute with canola or peanut oil

Method
 

Prepare the Filling
  1. In a large mixing bowl, combine shredded chicken, softened cream cheese, diced sausage (if using), chopped green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly until creamy.
Assemble the Egg Rolls
  1. Lay an egg roll wrapper on a clean surface and place about 2 tablespoons of filling near the bottom corner. Fold over, tuck in the sides, roll up firmly and seal with beaten egg.
Heat the Oil
  1. In a deep skillet, heat enough vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Egg Rolls
  1. Carefully add a few egg rolls to the hot oil, frying in batches for about 3 to 4 minutes until golden brown. Drain on paper towels.
Serve
  1. Arrange Voodoo Egg Rolls on a serving platter and pair with ranch dressing, blue cheese dip, or a zesty remoulade.
