- Preheat your oven to 180°C (360°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine turkey mince, grated onion, minced garlic, grated zucchini, and finely diced celery. Add breadcrumbs, egg yolks, thyme, sage, parsley, salt, and pepper. Mix thoroughly until well incorporated.
- Moisten hands and scoop out a portion of the mixture, shaping it into a patty. Repeat until you have formed 8-9 patties.
- Heat olive oil in a skillet over medium heat. Add rissoles in batches, frying for 3-4 minutes on each side until golden brown.
- Transfer rissoles to the baking tray and bake for 10-12 minutes, or until internal temperature reaches 74°C (165°F).
- Let rissoles rest before serving hot, paired with your choice of sides.
