  • 1 pound Salmon Fillet skin removed
  • 4 cups Fresh Spinach chopped
For Seasoning and Garnish

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat. Season salmon with salt, pepper, and lemon juice. Cook salmon for 4-5 minutes on each side until flakey.
  3. In the skillet, sauté minced garlic for 30 seconds, then add spinach and cook until wilted. Pour in heavy cream and stir in Parmesan until smooth.
  4. Add lemon zest, remaining lemon juice, and red pepper flakes. Simmer for 2-3 minutes.
  5. Mix in drained pasta, then fold in flaked salmon. If thick, add reserved pasta water to reach desired consistency.
  6. Garnish with parsley and serve.
